Tuna Dijon Burger

    For the Tuna Patties

    • 3 Tbsp mayonnaise
    • 1 Tbsp Dijon mustard
    • 1 large egg white
    • 1/4 cup flax meal (I found this at Sprouts in the bins)
    • 1/4 cup bread crumbs
    • 2 – 6.5 oz. cans of tuna in water, drained and flaked
    • 1/4 cup chopped green onions
    • 1 tsp tarragon

    To Make the Patties

    • 1/4 cup bread crumbs
    • Non stick cooking spray


    1. Combine the first three ingredients in a medium bowl and add remaining ingredients;stir well.
    2. Divide mixture into four equal portions, shaping into patties.
    3. Press remaining 1/4 cup of bread crumbs onto both sides of patties. Brown patties on both sides in a non-stick skillet coated with non-stick spray.
    4. Serve as a plain patty or as a sandwich with lettuce, tomato and a whole wheat bun.
