- 4 ounces dark rum
- 5 ounces cold pressed coffee (the brand's recipe said 'cold pressed.' Do it if you want but I didn't; a 24 hour wait wasn't going to happen. I just made iced coffee and it was good!)
- 1 ounce Orgeat Syrup
- Vanilla Ice Cream
- Sparkling Water, chilled
- Maraschino Cherries (optional)
- Combine the rum, coffee and orgeat syrup in a cocktail shaker with ice and shake until very cold. Divide the mixture (with ice) into two glasses.
- Top with a scoop of ice cream and top with a bit of sparkling water and stir. Garnish with a cherry and serve!
