Flourless (Gluten Free) Peanut Butter Cookies

  • 3/4 cup crunchy peanut butter
  • 1/4 cup granulated sugar (plus a bit extra for sprinkling on top)
  • 1/2 cup brown sugar
  • 1/2 tsp baking soda
  • 1/4 tsp sea salt
  • 1 egg
  • 2 tsp vanilla extract


  1. Preheat oven to 350 degrees and line baking sheets with parchment paper.
  2. In a mixing bowl, cream peanut butter, white sugar, brown sugar, baking soda, and salt until smooth.
  3. Add egg and vanilla and mix well.
  4. Scoop dough using a Tablespoon measure and place on the prepared cookie sheets spacing them 2 inches apart.
  5. Using the back of a fork, gently press down on the tops of the cookies to flatten them; do both directions.
  6. Lightly sprinkle the tops of the cookies with granulated sugar (optional).
  7. Bake for 10-12 minutes, rotate trays halfway through baking.
  8. Let cookies cool on the baking sheet for 5 minutes before moving to a wire rack to cool completely. (Be careful, the cookies will be very delicate until fully cool)
