It’s no secret I’ve had a terrible difficult year; I mean really, come on. Selling my home of 27 tears, moving twice, daughter with cancer, building a house, my dad’s passing. You know those tests they have for how life events affect you physically? That I am alive should be cause for celebration! All kidding aside it was just a year I would like to forget now that Lauren is in remission, I’m in my new home and my dad is in a better place. I might seem tough but I’ve shed enough tears for a lifetime and though happy to be in my home, my body is dead beat tired and I hope to soon finish this unpacking business and ONLY have to deal with everyday, mundane life. I am living for mundane. And well, a Super Bowl victory would be nice; a sweet boost that I would absolutely love. Can that be arranged please?

There were sweet moments though and I do want to focus on those. My living arrangements for months were less than ideal but without them I would have never met the family who lived down the street from me that I had never met before. I so appreciate Nate and Priscilla for having me over for moments of laughter and stress relief. I can’t begin to tell you how happy little Lena makes me; whenever she sees me and squeals, ‘Barb!’ I’m transported to someplace else and I just adore her; how can you NOT adore someone who wears a crown to dinner?

I have such gratitude for friends who knew I needed a break and we would just simply meet for a meal; nothing fancy but just the girls getting together to chat; blogging has brought me in touch with several like minded souls in Denver and I count several among them as dear friends…thank you Karen, Sara, Ansh, Holly and Jane for your friendship, for help with packing and  you Holly for knowing just when I needed a special delivery of one of your sweet treats!

I have to single out my sweet friend Ansh; just when I felt I would break from the stress she invited me to come stay with her family for a couple of days; the simplicity of our time together was exactly what I needed and her AMAZING Indian food sure didn’t hurt. I realized I do have some catching up to do if I’m going to be playing video games with a teen though. Super Mario skills just didn’t cut it! :)

My oldest daughter Emily moved the first week of December to North Carolina and while I was so happy for her that she landed on her feet after deciding not to transfer to Tennessee with her company; it was not great timing for our family. She was so instrumental in helping me get so much done, heck she even noticed the neighborhood that I eventually moved to and told me I should check it out; I simply would not be here if not for her. Her physical labors to help me move were beyond the pale and if not for space at her place to cook and take photos I’m not sure what I would have done so I was sad that she didn’t get to see all that effort come to fruition and spend some time here with me in my new home. I also knew I would miss her beautiful voice singing ‘O Holy Night’ for Christmas Eve services so that was sort of that last straw and Christmas sort of loomed as something I just wanted to avoid.

 I was a homebody without a home. Nothing seemed normal. I love to decorate my home and make holiday gifts (I even used real cookies to decorate my village one year; those are meringue cookies!) but without any of that tradition I preferred to stick my head in the sand; avoiding it at all costs. Still as the day loomed before me; I knew that staying home in a space that was not mine was going to be depressing. I could not stick my head in the sand far down enough to avoid the one day that says family, hearth  and home and have none of that without being sad so I decided to make something happen. Luckily it was easy. I simply asked my friend Abbe what she and her hubs were doing. Abbe is Jewish so I figured there would be no big Christmas event and that was fine with me; I wasn’t in need of an event as much as I was in need of company for lack of said event.

We got together in the afternoon; I know I brought something but I can’t even remember what it was. It was hardly necessary as Abbe is an amazing cook and she had more little dibs and dabs of stuff she had made over the holidays that I got to enjoy. As it turns out, Abbe’s hubs was brought up Catholic but converted to Judaism and so there was even some Christmas music playing. You know it was sort of perfect; festive with some reminders of my holiday but not a big tree and presents and all the jazz that I really, seriously wanted to avoid. We sat in a charming room near the front of the house with the most amazing big fireplace (I sort of regretted not having one put in at that moment but gas could not have compared!). We had cocktails and in front of me was this big, colorful bowl of a Chex cereal mix snack. It was trouble from the get-go. Some sweet, some heat, lots of crunch…it was sort of my perfect nibble. Thanks for being so very gracious Abbe and well, thanks for introducing me to this mix. Love, love, LOVE it!

Abbe had recently attended a local event sponsored by the folks with Chex Mix and came away with some new ideas and this was her version of the traditional mix we all know. I’ve added a couple of things of my own but didn’t stray too far. Who would have EVER thought of Sugar Corn Pops with Chex but they are so perfect with the peanut butter sauce that includes Sriracha, Worcestershire and garlic. But I really think it’s those little Sriracha Peas and Wasabi Peas that just make it; little morsels of heat that make this so ‘not your mother’s Chex mix!’

The mix is made; the drinks are planned (one is this Tom Collins with a splash of ORANGE and another orange one you’ll love that I’ll post for this coming Friday Cocktail). My home is open for Super Bowl viewing; I even bought a new TV…amazing how little the one I had became with 9′ ceilings plus I decided I really did need a TV in my bedroom; my waking at 2am has not yet subsided!

I know I’ve already asked and maybe some of you will comply but now I’m begging you…please yell and cheer and shout for my Broncos, OK? No, wait…I’m serious. PRETTY PLEASE? Thanks…I needed that!

More good news? I actually made this dish, took photos, processed them and scheduled the post to publish at it’s normal time. I haven’t found my gray card for white balance and actually need a curtain for the kitchen doors because the light is SO bright but I’m getting there; this is a first this year though so I’m feeling a ‘whoo hoo’ is in order!! Thank you all for being so patient. For letting me rehash some old things and for missing other days entirely; it’s appreciated more than you know.

Sriracha Crunch Chex Mix

Serves: Approximately 15 cups of mix
Ingredients
For the Cereal Mix:
  • 4 cups of Rice Chex
  • 2 cups of Rice Krispies
  • 2 cups of Sugar Pops
  • 2 cups shrimp chips
  • 1 c peanuts
  • 1 cup sriracha peas
  • 1 cup of wasabi peas
  • 1 cup fried onion rings; large pieces broken
  • ½ cup dried coconut
For the Sauce:
  • 6 T of butter
  • 5 T of peanut butter (creamy or chunky)
  • 4 T brown sugar
  • Juice of ½ lime
  • 2 Tbsp Worcestershire sauce
  • 2 tsp Sriracha hot sauce
  • ¾ tsp garlic powder
Instructions
Oven Method (I like the bit of crispy it adds):
  1. Preheat oven to 250 degrees.
  2. Melt butter, peanut butter and brown sugar in microwave until butter melts and peanut butter gets soft. Whisk until smooth. Stir in lime juice, Worcestershire, hot sauce and garlic powder. Make sure you stir this until it makes a thick, smooth sauce.
  3. Mix all of the cereals and snack items into a large bowl. Add the sauce mixture and stir well.
  4. Divide mixture between two large cookie sheets with rims and bake for one hour, stirring occasionally.
  5. Remove from oven; pour onto a parchment lined counter-top and let sit until cool and dry.
Microwave Method:
  1. Mix ingredients in a microwave safe bowl as indicated for oven method.
  2. Microwave for about two minutes. Stir well and nuke for another two minutes. Stir again. And again...cook for 1-2 minutes more. Pour out onto a parchment lined counter top to let cool and dry.
  3. Microwave for about two minutes. Remove from microwave and stir well.
  4. Return to microwave for another two minutes; stir.
  5. Now another two minutes! Stir. Now 1-2 minutes more.
  6. Remove from oven; pour onto a parchment lined counter-top and let sit until cool and dry.
Notes
Use caution when cooking this in the microwave as the center gets hot first; take caution to not let it burn!

I tried to at least online; I sure had some ‘woe is me’ moments, I won’t lie! But where do you go if not forward? And dwelling and looking for constant sympathy is just not me…and now that forward movement has me in a better place where one of my biggest issues of the day is how to get a round dryer vent tube to work with an oval wall connection. Let me tell you…MUCH better than dealing with cancer. :)

Thanks Hannah…It has been a year of seeing the real people emerge in the blogging world too; many avoided my site and never once acknowledged my daughter and that said a lot to me but not as loudly as those that stayed the course WITH me. Life happens and sometimes it’s not pretty but to gloss over everything; well, that’s not human! :)

Ron’s team didn’t make it to the Superbowl. When I finished reading this post I asked him who he was going to root for now that his team was not playing. Honestly, he said *Denver* so there you go, another one rooting for you :)
I just love the way you are so open and forthright in your blog posts. Makes for a very intimate read (also makes we want to hug the daylights out of you).
Great looking Superbowl (or anytime) snack. Enjoy the game on that new TV, hope lots of friends come over and don’t worry about the unpacking. It will all get done and soon everything will be just as you want it to be.

I try not to glom about my travails too much but a years worth of one thing after another simply can not be denied. We’re human and sometimes life sucks. I’ve had bad years before but I must say this probably tops the list! So. Glad. It. Is. OVER…it can only get better right? Being in my own home again; well, it’s beyond priceless. I had moments I wasn’t sure it was ever going to happen it seemed to drag on so long but that’s now in the past and boy am I glad!

Give Ron a big hug for me…smart man. And like I just told someone else…it’s a lot about Peyton Manning. Not the name brand superstar but the man who has worked hard, shown true leadership, made me respect him and his work ethic especially after coming back from such a serious injury. He and the coach are great guys and great guys that expect the same from those around them. I just love this team this year. Fingers crossed!

I have done my share of howling at the moon but I’ve always been the kind to really look for that glass half full. I’ve had a life filled with challenges that could probably make a good read for someone…but I just wanted to keep on, look ahead, somehow make it work and not dwell on the crap. I love a good challenge; I’m just sort of looking for one that is more fun about now. :)

And You know what Greg…I had dropped my allegiance to the Broncos. A string of some ne’er do well players, nasty coaches…I don’t know, I like to root for a team with people I actually like. And I like Peyton Manning. I have such respect for his demeanor on and off the field and his work ethic is pretty amazing. That he came back when so many doubted he would, that everyone wrote off the Broncos, well, maybe part of it is my cheering loudly for what no one thought could happen. And that it was done with grace and not a lot of trash talk and back alley fighting. I’m weird I know but hearing about athletes in barroom brawls or seeing them show how nasty they are in interviews; that loses my interest completely. I want to to PROUD of my team! And I am. And thanks…they truly are worth rooting for!

Goodbye 2013 and hello to 2014 and all the good that will come with the new year! I am so glad things are starting to brighten in your daily life. Months of months of stress really can take a toll on your spirit and outlook but you are seeing the light at the end of the tunnel now and I think it’s wonderful! And, yes, a Broncos win would be a great boost to morale in Denver!!

Really lovely post. I knew your year was hard from hints you dropped from time to time, but I didn’t realize it was as difficult as it was. Glad you’re through that! You endured hardship with real grace, which isn’t all that common. Anyway, good recipe! I love homemade Chex Mix — I’ll bet we make it 30 weekends each year. A rough year indeed, but what amazing friends and family you had to pull you through! I’m so glad that you are settling into your new home and have a community of support behind you. This is your year!

I’ll take hugs for any reason and I hope you’re right; I’m eager to make last year the ‘year that was’ and this year something new and bright and better! I just LOVED this; feel free to heat the sauce up a bit more too…though the occasional sriracha or wasabi pea gives quite the little boost!

My grandmother always said not to ask how things can possibly get any worse because they most certainly can! I am so glad to see that you have come out on the other side of your difficult year smiling. This mix looks wonderful. Love all the sweet and salty going on here. She was right though I don’t remember asking. I do remember querying God about that not giving you more than you could handle business. I’m thinking we got close if not there! It is a great Super Bowl snack even for someone who does not like football. Know anyone like that? :)

You are SO on your way. We all knew you were having a crap year – with the worst being your daughter’s illness. It’s wonderful that all that is behind you and you can wipe the slate and create the life YOU want.

I love chex mix but we don’t have all the cereals here. It was my favorite winter snack growing up.

I think maybe the worst for me was her being sick added to my not being able to offer her my home to come to. That just pained me in a way that is hard to describe but I’m sure all moms can understand. Still, you are right; it was the shock of all shocks and we are truly blessed that she has come through it with flying colors. I’m so appreciative of blogging friends who reached out; stayed the course and continued to offer me even the smallest bit of encouragement; it all matters. Now if I could just find a dryer vent tube that fits life would be good. :)
