Grilled
Chicken with Lemon Sauce
1
cup soy sauce
1 cup orange juice
1/8 cup vegetable oil
2 Tbsp fresh ginger, peeled or minced (can substitute 2
tsps. dry)
2 Tbsp fresh cracked pepper
4 chicken breasts, cut in half, skinned and boned
Rice and Chow Mein Noodles
Sauce:
1 cup granulated sugar
2 Tbsp cornstarch
2/3 cup water
2/3 cup chicken broth
1 Tbsp minced garlic
1/8 cup grated lemon zest
Mix
together soy sauce, orange juice, safflower oil, ginger
and cracked pepper. Pour over chicken. Cover and marinate
in refrigerator for 2 hours and up to 24 hours.
Grill chicken over hot coals about
4 minutes on each side or until juices run clear. Remove
from grills and allow to stand for 10 minutes. Slice
chicken across grain. Cover in glass dish with juices and
keep warm in oven.
Mix together sugar and
cornstarch, combining with water and broth in heavy sauce
pan over medium high heat. When mixture begins to bubble,
reduce heat to keep softly bubbling for 15 minutes. Turn
off heat and stir in garlic and lemon zest. Place chicken
over rice, pour sauce over top and sprinkle with chow
mien noodles. Serve immediately.
Serves 6-8.
