Baked Scallops
16-20 sea scallops (two per person)
5 Tb butter (softened)
5 cloves garlic (minced)
2 shallots (chopped)
3 pinches nutmeg
salt & pepper to taste
1 cup bread crumbs
4 Tb olive oil
1/4 C parsley (optional)
lemon wedges (for garnish)
Directions:
Sauté the butter, shallots and garlic until onions are
translucent then add nutmeg and salt & pepper.
Rinse and drain scallops.
Butter a casserole dish then place scallops in dish; pour shallot mixture over the scallops (toss around a bit).
In a separate bowl- mix together bread crumbs and olive oil; sprinkle crumb mix over scallops
Bake
11-14 minutes until crumbs are brown and scallops are done.
Top with parsley and serve with lemon wedges
