Pecan Tart
2 cups whole pecans
¼ cup honey
¾ cup light brown sugar
½ cup granulated sugar
2 T. butter
½ cup heavy cream
10 inch pastry tart shell
Process the nuts in a food
processor for a few seconds until coarsely chopped. Combine the
honey, brown sugar, granulated sugar, and butter in a saucepan.
Bring to a boil, stirring to dissolve the sugar, then let boil
for exactly 33 minutes. Add the nuts and cream, stir to blend.
Remove from heat. Pour the nut mixture into the tart shell and
smooth the surface. Let stand in a cool place until the filling
sets (it will not become hard).
