Pecan Butter Balls

These cookies were made by my Grandma Bathe every year I could remember and the tradition continued with my mother. No matter how busy the holiday season, we HAVE to make these cookies to have on Christmas Eve. There are versions I've seen and tasted called Mexican Wedding Cookies and others, but none are better than these...maybe it's my memories that make them so much better!


1 C butter
4 Tbsp. sugar
2 tsp. vanilla
2 C flour

1/4 tsp. salt
2 cups finely chopped pecans
Confectioner's sugar

Cream butter and sugar. Add vanilla; mix together with flour and salt.. Add nuts and blend with hands.
Refrigerate 30 minutes.
Roll into 1-inch balls and place one inch apart on a cookie sheet. Bake for 15-20 minutes at 375 degrees until set but not brown. Remove from oven and let set for 1 minute. Roll in confectioner's sugar. Roll again if desired when cool.
Makes 4 dozen cookies.
