Cheddar Gougeres
(Makes 48 pieces)
8 tbsp unsalted butter, cut in small pieces
1 cup all-purpose flour
V2 tsp salt
4 eggs
1 cup shredded Cheddar cheese
Heat oven to 400°F. In medium saucepan heat butter with i cup water until melted. Add flour
and salt; stir vigorously until mixture pulls away from sides.
Remove from heat. With wooden spoon stir in eggs one at a time, then cheese. Drop by
tablespoonful onto ungreased baking sheets. Bake 20-25 min., or until golden. Serve warm.
