Smoked Oyster Spread


2 - 8 oz. packages cream cheese
1 tbsp. dry sherry
1/2 cup parmesan cheese
1/4 tsp. paprika
1 tsp. grated onion
1/2 tsp. dill weed (optional)
1/2 tsp. salt
2 tins smoked oysters, drained and chopped coarsely
1/2 cup whipping cream

Cream 1 package cream cheese with sherry until smooth. Blend in parmesan cheese, paprika, onion, dill and salt. Fold in oysters. Whip cream until very stiff. Add to cream cheese mixture and chill overnight. Before serving, blend in second package of cream cheese until smooth. (This procedure will restore smooth texture to mixture which can become spongy overnight.)
