Margarita Watermelon

I love this grown-up fruit with margarita fixings; I followed the same mantra I have using quality ingredients that are in the margaritas which we all know I love. Tequila and Orange Liqueur infuses watermelon slices which are then finished with lime juice and a sprinkling of coarse salt. The longer the watermelon soaks, the more flavorful it becomes. I was a good girl. I waited…but then had my first bite and so did my guests and somehow that photo never happened! I’ll try again next time; there will be a next time.

Ingredients
  • 1 small seedless watermelon, red or yellow, quartered and cut into 1-inch-thick wedges
  • 1 cup sugar
  • 3/4 cup water
  • 1/2 cup tequila
  • 1/4 cup orange liqueur
  • 2 limes, halved or cut into wedges
  • Flaked sea salt or coarse salt
Preparation
  1. Arrange watermelon in a single layer in two 9-by-13-inch baking dishes. Bring sugar, water, tequila, and Orange liqueur to a boil in a small saucepan. Cook, stirring, until sugar dissolves, about 1 minute. Let cool slightly. Pour syrup over watermelon wedges, and refrigerate for at least 45 minutes.
  2. Remove watermelon from syrup, and arrange on a platter. Squeeze limes over melon, and season with salt.
Notes

Don’t skimp on your tequila. I use a reposado which is aged a bit; not too pricey but SO much better than anything called Gold!
Same is true with the orange liqueur. Triple Sec is flavored sugar water; try Citronge or Grand Marnier for a real orange boost to your cocktails.
